Details:

Hard Red Spring: Hard red spring wheat, high protein wheat used for bread, baked goods and other products requiring higher protein flour.
Hard Red Winter: Hard red winter wheat, medium to high protein wheat used for bread, baked goods and other products. It is also commonly used to increase protein in flour for other applications.
Soft Red Winter: Soft, low protein wheat used for cakes, pastries, biscuits and muffins. Suitable for products where lower protein and soft flour characteristics are required.
Hard White: Hard, light colored, opaque wheat with medium protein characteristics. Used for bread and brewing.
Soft White: Soft, light colored, low protein wheat grown in temperate climates. Used for pie crusts and pastry. Flour is sometimes made from soft white winter wheat.
Durum: Very hard, high colored grain used to make semolina flour for pasta.
Feed Wheat: Wheat used for livestock feed and other animal feed requirements.
